Wet Processing of Arabica Coffee and Ground Coffee Processing at the Product Processing Unit of the Koperasi Serba Usaha (KSU) Fa-Masa Ngada Regency

INTISARI. Tanaman kopi merupakan salah satu komoditas perkebunan yang berperan sebagai penghasil devisa bagi negara, sumber pendapatan petani, dan penyedia lapangan kerja. Tanaman kopi yang banyak dikembangkan di Indonesia adalah kopi Arabika dan kopi Robusta. Pengolahan biji kopi berperan penting dalam menentukan kualitas dan cita rasa kopi. Praktik kerja lapang (PKL) bertujuan memberikan bekal pengalaman praktik tentang pengolahan kopi Arabika secarah basah dan pengolahan kopi bubuk. Metode pelaksanaan PKL adalah partisipasi aktif dalam kegiatan pengolahan kopi Arabika. Kegiatan ini bertempat di KSU Fa-Masa, Desa Beiwali, Kecamatan Bajawa, Kabupaten Ngada. Hasilnya menginformasikan bahwa pengolahan kopi Arabika meliputi kegiatan sortasi pertama (sortasi buah merah), perambangan, pengupasan kulit buah (pulping); sortasi kedua, fermentasi, pencucian, penjemuran, pengupasan kulit (hulling), penimbangan, pengrostingan, penggilingan, dan pengemasan. Berdasarkan hasil PKL di Unit Pengolahan Hasil KSU dapat disimpulkan sebagai berikut: 1) rata-rata penyusutan kopi selama kegiatan pengolahan adalah sebesar 20% dari bahan baku yang digunakan. Umumnya, penyusutan disebabkan karena penurunan kadar air dan kelalaian pekerja yang menyebabkan tumpahnya kopi selama kegiatan produksi, 2) proses pengolahan kopi Arabika secara adalah sortasi pertama, perambangan (buah kopi direndam lalu kopi yang tak berkualitas baik seperti yang diserang hama atau busuk akan mengambang), pengupasan kulit buah (pulping), sortasi kedua, fermentasi, pencucian, pengeringan, dan penggudangan, secara berurutan. Sedangkan, pengolahan kopi bubuk adalah pengupasan kulit (hulling), penimbangan, penyangraian, penggilingan/penghalusan, dan pengemasan, seara berurutan. Penerapan aspek manajemen yang mendukung keberasilan dari usaha yang dijalankan yaitu perencanaan, perorganisasian, pelaksanaan, pengawasan, dan evaluasi. Disarankan agar dalam pengolahan hasil kopi arabika, alat dan bahan khususnya pakaian yang digunakan harus sesuai dengan kegiatan yang dilakukan.

ABSTRACT. Coffee is one of the plantation commodities that acts as a foreign exchange earner for the country, a source of income for farmers, and a provider of employment. Coffee plants that are widely developed in Indonesia are Arabica coffee and Robusta coffee. Processing of coffee beans plays an important role in determining the quality and taste of coffee. The Field Work Practice (FWP) aimed to provide practical experience on wet processing of Arabica coffee and processing of ground coffee. The method of implementing FWP was active participation in Arabica coffee processing activities. The activity took place at KSU Fa-Masa, Beiwali Village, Bajawa District, Ngada Regency. The results informed that Arabica coffee processing was first sorting (red fruit sorting), mining, fruit peeling (pulping); second sorting, fermentation, washing, drying, hulling, weighing, roasting, perambangan (coffee cherries are soaked and those that are not of good quality, such as attacked by pests or rot will float), and packaging. Based on the results of FWP at the KSU Product Processing Unit, it can be concluded that 1) the average shrinkage of coffee during processing activities was 20% of the raw materials used. Generally, the shrinkage is caused by a decrease in water content and the negligence of workers which causes the coffee to spill during production activities; 2) the Arabica coffee processing process was first sorting, perambangan, pulping, second sorting, fermentation, washing, drying, and warehousing, respectively. Meanwhile, the processing of ground coffee was hulling, weighing, roasting, refining, and packaging, respectively. The application of management aspects that support the success of the business being carried out were planning, organization, implementation, monitoring, and evaluation. It is recommended that in the processing of Arabica coffee, the tools and materials, especially the clothes used, must be in accordance with the activities carried out.
